Named after the unique, narrowly planted vineyard where the soil was left untouched for the first few years. As expected, with low vigour, those baby vines looked like little bonsai trees. How cute. The aim here is to make the lightest possible expression of the grape without sacrificing complexity. Mission accomplished. Lots of sour cherries and sage on show, it's like the Jura x Burgenland mash up of my dreams. ABV: 11.5%
