Stéphane and his wife Bénédicte have 50 hectares in the Jura, from which they produce intensely terroir-driven wines. When Stéphane took over from his father he converted the estate to organic, quickly followed by a conversion to biodynamic. The whites are made from Chardonnay and Savagnin, and are incredibly pure and mineral, while the reds are made from Pinot Noir, Trousseau and Poulsard, and are lifted, light and aromatic. Delish.
