Starting on the smallest of scales (1 hectare) in the formerly neglected Côte des Bars region of Champagne, Cédric Bouchard very quickly shot to the absolute top of the tree. His Champagnes are now considered among the very best in the entire region. His philosophy has been radical yet simple from the start – single varietal, single vintage, cuve aging, low pressure and zero dosage. On top of this he always restricts yields and only uses indigenous yeasts. He has never deviated from these principles and we can see why - the results are pretty incredible. Striking a near-perfect balance between fruit, savouriness, richness, and freshness, these are wonderfully elegant and intense champagnes – yes Cédric!
