One of the discoveries of 2025, shame is there is hardly any. Trebbiano from 2023 was aged in oak, before secondary fermentation in bottle and 6 months spent on the lees. Everything is done by hand, I know this because I personally disgorged and recapped half of our UK allocation. Tart green apples, bitter nuts, fresh lime citrus. They're not looking for toasty richness, rather a driving, gastronomic sparkling. Stoked to have some, get some yourself.
