Fruit from way back in ’09, dried on clay mats in a process known as passerillage. Fermentation kicked off in barrel with indigenous yeasts and, thanks to the insane sugar concentration, it carried on for a full 12 years before naturally coming to a stop. Bottled unfined, unfiltered, and with zero added SO₂.
Read that again and let it sink in. The amount of not just effort, but time that went into this… you can taste every bit of it. Magic.
