Domaine des Fauvettes, De l'Aube à l'Aube
Place: Burgundy, France
Grape: Pinot Noir
Vibe: Wow
From young vines of Pinot Noir planted over pure limestone in Uchizy, facing east at around 300 metres above sea level. The grapes ferment as whole bunches for a month in cuve, left to infuse without pigeage or remontage, before being pressed to large foudres for a year of élevage.
2022 was a warm vintage and, even at this altitude, shows a denser, darker expression, with firm tannins and a touch of wood spice. This will reward a short snooze in the cellar.
2023 is a cracker. Nimble and radiating red fruit and spice wrapped around a mineral core. I'm cracking into this now, no regrets.
