Perched on the steep, east-facing slopes of Chignin, Domaine H is the new project of Sukhwan Ha, a Korean-born sommelier-turned-vigneron. Before picking up secateurs, Sukhwan made his name in Lyon as chef-sommelier and owner of Le Passe-Temps, one of the first restaurants in the region to bag a Michelin star while championing Korean food and a low-intervention wine list. He later ran an import business in Korea, bringing names like Emmanuel Overnoy, Octavin, Pascal Côtat and Thierry Allemand to Korean collectors.

When COVID shut the restaurant, Sukhwan used the downtime to visit vineyards instead, training in Beaune and interning with Emmanuel Overnoy, an experience that inspired him to take the leap to becoming a full-time vigneron. He later acquired the historic Domaine Yves Girard Madoux in the Savoie, where he now farms the old vines across high, calcareous terraces, parcel by parcel.

Roussanne shows real tensile minerality in his hands, while Jacquère and Mondeuse keep things lively and low in alcohol. The vineyards sit between 400 to 500 metres, herbicide-free long before he arrived, and Sukhwan began an organic transition in 2023 with some biodynamic trials on the side. First vintage: 2023. The 2024s came without added sulphites, whites aged in used barrels and demi-muids from producers like Pascal Côtat. These wines are destined for the very top.
