Fattoria di Vaira are one of the largest biodynamic farms in Italy, producing cheese, honey, olive oil and cereals alongside their wine. They’ve spent years restoring the soil of the land through biodynamic practices, to the point where it’s almost returned to the purity of wild soil. The soils are rich in sand and clay, and the grapes grown here include Falanghina, Trebbiano, Montepulciano, Sangiovese, Cabernet Sauvignon and Merlot. Shepherds, farmers, cheese makers and vignerons all work side by side on this gorgeous hillside estate – paradise!
