Biodynamically grown Chardonnay, basket-pressed by hand. 31 day carbonic maceration for 31 days, then it's off to terracotta for 10 months. No filtration, no fining, no added sulphur.
Techy details aside, this is such a unique take on Chardonnay. It's layered and complex, tropical but with a savoury edge. Makes me crave a Gilda in the summer sun. Actually, it kinda tastes like one too. I mean that as a compliment. This is such an interesting expression, and it's so cool to see the delicious results when a creative approach is taken to wonderful fruit. ABV: 9.9%
