Life affirming 'rosé'. Probably best not to think of this as having a category, it is that mind bending. Aroma and flavour of a red, texture of a white, grip of a macerated wine. 

Single-site Tavel? Sign me up. Whole bunch maceration of grapes from the vines planted on complex, fossil-rich soils – a mix of red clay, ancient sand, limestone, and galets. Grapes are pressed before aging for 10 months in cement tanks.
