Camille Thiret is quietly redefining Côte de Nuits-Villages.
Working alongside her partner, she farms pristine fruit from old parcels around Comblanchien. An area she describes as an “underrated and unknown appellation,” with soils that can rival those of premier cru vineyards. A small amount of additional fruit comes from likeminded friends and growers in neighboring villages.

Things really took off in 2022 with the acquisition of some old vines that once belonged to Domaine Gilles Jourdan, along with a new (but centuries-old) cellar. She’s also had the rare opportunity to be mentored by none other than Bernard Noblet, the former chef de cave at Domaine de la Romanée-Conti. With that kind of pedigree, both quality and demand have shot through the roof.

In the cellar, Camille keeps things low-intervention: pump-overs are done by gravity, and grapes are gently pressed using a small wooden basket press. Fermentations are spontaneous, with natural yeasts and only minimal sulfur. All whites begin fermentation in stainless steel, she used to start in barrel but was concerned about sugar, before finishing fermentation and malolactic conversion in barrel. After 10 months, the wines are racked back into stainless to freshen up before bottling.
