The press juice from Field Notes 1, aged in barrel for 11 months, then blended with a splash of semi-carbonic Pinot Meunier. Geeky winemaking details aside, this is a definite step up in complexity, while still keeping all the easy-drinking charm of its sibling. The fruit is turned up a notch: think almonds, kirsch, and a more mineral-driven profile. The texture is pure silk, with a subtle, savoury, clay-like edge running through it. Polished, poised, and quietly impressive. ABV: 11%
