Few wines speak as strongly of where they're from as those made by Eloi Cedó Perelló on Mallorca. Originally from Montsant, Eloi started his project in 2010 making one-off wines from vineyards farmed by friends around Catalunya. By 2012 he'd produced the first vintage of Château Paquita, a tribute to his late mother and a blend of Mallorcan varieties.

Eloi farms two and a half hectares of tiny plots spread across Felanitx and Porreres in the island's south east, with the oldest vines dating back to the sixties. He works organically with biodynamic principles, and in the cellar adds nothing, letting the place do the talking. The vineyards sit on iron-rich red clay soils, cooled by sea breezes and the Mistral, and the wines taste exactly like that: sunkissed fruit, herbs, citrus and brine, but always delicate and light on their feet.
