Ex Vero is one of the most beautiful vineyards I’ve had the pleasure to lay my eyes on. A steep, verdant hillside nestled between Edwald at the bottom and Andreas, his brother, Tscheppe’s house at the top. The energy here is palpable and it reverberates in the bottles too.
Ex Vero 1 sits at the base of the hill on shallower soil. Always a blend, always with that signature sesame reduction. Nothing like it. This ‘S’ bottling sees a trace amount of residual, as the ferment never really finished. Over time this has melted into the wine, and the slight spritz is more noticeable than any real sweetness. In fact, it makes an ideal choice for something spicy. Decant it, and be ready for one hell of a ride. Oh, this has now seen a decent amount of bottle age and is in a very, very good place. Thank me later.
